
First cheese we randomly tried was Livarot, an artisinal cheese named after a village in Normandy. It’s nickname is The Colonel because it is wrapped with straps of rush or paper like a colonel’s stripes. This is a raw cow’s milk cheese that has a hevey, moist p We tried it along with some salami, baguette, and (of course) some wine. Alone, it has a very strong taste which we weren’t sure about. But with the bread and meat, Livarot’s spicy flavors came through and melded nicely.
